Something super quick and simple to do with the cans of chickpeas sitting in the cupboard.
I served them with loads of fresh salad, avocado, cucumber, tomato and some sweet chili sauce in a wrap.

Thai spiced chickpea burgers
Make 8 (4 servings)

1 can chickpeas (drained and rinsed)
1 stick celery
1 red onion
1 bunch coriander (approx 15g)
2 tsp Red Thai Curry paste
1 tsp Ground cumin

Rinse and drain chickpeas and put in blender.
Roughly chop onion, celery and coriander and add to the blender with the curry paste.
You want to blend the mix so that it forms a paste but still has a rough texture.
Use you hands to form 8 ‘burgers’ and place them on a non stick tray or a tray lined with baking paper.
Bake in a preheated oven for 35 min at 180
